How To Make Stuffed Bifteki — Recipe

Who doesn’t love a good stuffed Burger? Our friends Reckless Serenade, also known as the BBQ Band for this year’s Warped Tour, shared one of their favorite recipes with us from the folks at The Skinny Opa. Kick off the summer grilling season right with these stuffed Burgers guaranteed to bring a smile to your face.

Each year, one band gets the privilege of being on the Warped Tour in exchange for hosting a nightly BBQ for all the members of the tour. This means they can be grilling for hundreds of people at a time! The typical Warped Tour BBQ includes approximately 300 Hamburgers, 300 hot dogs and 100 veggie burgers .

Over the course of the tour they gain very specific know how on how to grill for a crowd. We’ve asked them to share some of those tips with you so you can host the very best backyard Burger parties. Check out the tips after the recipe.

Instructions
  1. Lay out the ground in a big/wide bowl. Add all ingredients aside from the kasseri or white cheese.
  2. Mix well with your hands; it really needs to be with your hands…pretend you are giving someone a massage. You want to make sure all the ingredients get mixed in well.
  3. Once this is done, take the cheese and cut into mini cubes.
  4. Lay about 2 tbsp. of meat in your hand and pat flat; then add the cheese to the center and cover into a patty leaving no ends open. If you do, the cheese will sneak out.
  5. Once your patties are made, pre heat a skillet or pan and place each patty in the pan.
  6. Once they have a nice color, remove from heat and add lemon.
  7. Serve with bread, broccoli, lettuce raps, or rice.

Reckless Serenade’s tips for feeding a large crowd:

  • Be prepared for every other person in the grocery store say things like “big party tonight?” “That sure is a lot of food!” And other various comments
  • Put as many Burgers on the grill as possible
  • Grilling for a big crowd can sometimes be stressful so be sure to throw a surplus of high fives to your crew to keep up the good vibes
