Y’all! I am a Texas grill girl and this was one of the best burgers I have ever had! I made them for the whole family tonight and we were all amazed! I don’t know how to explain it but the hamburger meat was smooth instead of the usual lumpy chargrilled version. I’ve been to a few tailgates in my life but I think I’ll be adding this to football Saturday.

- 2 lbs Schweid and Sons Ground Beef, any blend
- 3 tbsp Butter
- 3 tbsp All-Purpose Flour
- 1/2 cup Pale Ale
- 1 1/2 cups Milk
- 3 cups Sharp Cheddar Cheese, shredded
- 1 tbsp Hot Sauce
- 6 Pretzel Rolls, split
- 2 tomatoes, thinly sliced

Burger Instructions
- Melt butter in a Dutch oven over medium heat. Add flour; cook, whisking constantly, 2 minutes. Gradually add ale and milk, whisking until smooth. Cook, whisking constantly, until mixture is thick and bubbly.
- Gradually whisk in cheese and hot sauce until cheese is melted.
- Meanwhile, shape Schweid and Sons beef into 6 patties; season lightly with salt and pepper. Cook patties in a large skillet over medium-high heat 5 minutes per side or until no longer pink in centers.
- Serve patties on rolls with tomatoes, cheese sauce, and onion rings.
Onion Rings Instructions
- Bake or fry onion rings according to package directions.
