Sprinkle patties with ½ tsp each salt and pepper. Cook according to package directions in a large skillet. Remove from skillet; keep warm.
Cook onion, bell pepper, mushrooms, garlic, and ½ tsp each salt and pepper in skillet 5 minutes.
Stir together arrowroot and broth. Add to skillet. Cook, stirring constantly, 2 to 4 minutes or until sauce is thickened and vegetables are tender. Top burgers with vegetables.
Side Dish Directions
For side dish: preheat oven to 400°F. Toss together potatoes, oil, lemon-pepper, and garlic salt on a lightly greased large rimmed baking sheet.
Bake 25 minutes. Stir in kale, and bake 15 minutes longer or until potatoes are tender, stirring occasionally. Sprinkle with thyme.
