Season the prime patty with salt, pepper and garlic powder. Flop the burger onto a (high, almost smoking) heated cast iron grill pan (not many people in NYC have outdoor grills) lower the heat after 2-3 minutes. After you get a good sear, lower the heat to medium and cook for another 3-5 min until inside of burger is 135 degrees – set it aside to rest (it will keep cooking when it comes off the cast iron.)
Take two slices of buttered sourdough slices and grill in a skillet. Add the prime burger, a slice of cheddar. Dress with mayo and Jamaican Pickapeppa Sauce. Bacon is optional (but is it ever, really?)
