26 ounce Rotel Diced Tomatoes with Green Chilies, drained

12 ounce Contanada Tomato Sauce, reserve some for topping
Guacamole

Ripe Avocadoes

Roma Tomatoes, diced

Red Onion, diced

Instructions
Preheat Oven to 350°F.
Combine topping to create fresh guacamole, set aside and chill.
Prepare meatloaf by combining meatloaf ingredients and mold into loaf.
Top meatloaf with tomato sauce, cover with foil and bake for 1 hour 30 minutes.
Take foil off and brown for an additional 10 minutes.
Cut meatloaf into slices and serve each portion topped with 2oz of the chilled guacamole and serve.
